This unique offering showcases Wilder’s relentless dedication to quality, innovation, and the pursuit of perfection.
Though a veterinarian specialized in livestock farming, Wilder’s journey into coffee excellence began in 2016 when falling coffee prices and his father’s illness prompted him and his brother to revitalize their family farm. Initially, their coffees scored 80-83 points on the cupping scale, despite their meticulous preparation. Determined to raise the bar, Wilder turned to precision agriculture, analyzing soil samples and applying targeted nutrients and fertilizers to optimize soil pH, unlocking the full potential of his coffee trees.
Wilder’s approach to anaerobic fermentation celebrates the “true coffee character.” This method slows microorganism activity, capturing subtleties in flavor and aroma that are often overshadowed in aerobic processes. Fully ripe, impressively large fruits are hand-harvested and washed in water tanks to remove impurities, ensuring a clean and flawless base for fermentation.
On his Bella Alejandría farm, Wilder took his dedication even further. Individually cupping each Geisha tree from the family farm “La Dinastía,” he identified phenotypes that produced tall, floral trees with vibrant jasmine and lemongrass notes. From these, he propagated 1,000 new trees, creating a Geisha genetic lineage renowned for its intense floral characteristics. This meticulous selection process, coined “Pure Genetics,” included a precise 36-hour fermentation to amplify its distinctive flavors.
As Wilder once shared, “Geisha originates from a region in Ethiopia. I wanted to purify the variety and discovered three main types: one high-growing and intensely floral, one with rounder beans and a sweet, vanilla-like profile, and one elongated with fruitier notes. My goal was to highlight the floralness that defines the Geisha character.”
