At Crane House Coffee, we are thrilled to introduce an exquisite Geisha coffee, crafted in partnership with the talented Jorge Rojas and made possible through the invaluable guidance of Desarrolladores De Cafe.

Born in 1988, Jorge Rojas grew up immersed in the art of coffee farming. After losing his father at the tender age of 12, Jorge and his mother worked tirelessly on their family’s coffee farm, dedicating their lives to their passion. Despite finishing school after the third grade, Jorge pursued his dream of producing high-end specialty coffee.

He became an active member of ASOPEP Planadas, an association focused on ecological agriculture. Alongside over 300 other farms, Jorge proudly achieved an organic BIO certification through ASOPEP, placing him among a select group of farmers dedicated to producing organic, high-quality coffee.

This exceptional Geisha coffee stands out thanks to its meticulous fermentation process. The two-step, 48-hour fermentation began with whole cherries in anaerobic conditions at a pH of 6.3, followed by a pulping stage that reduced the pH to 3.9. The controlled temperature ranged from 24°C during the day to 19.5°C at night, resulting in a profile that truly highlights the varietal's unique flavors.

Further enhancing the coffee’s character, the drying process was carefully executed in Marquesina with strategic interruptions. By pausing the drying on the 4th day and resuming between the 12th and 14th days, Jorge achieved an even fruitier, cleaner, and fuller cup—intensifying its complex flavors without altering the original profile.
