This Sidamo Heirloom is a rare varietal with Ethiopian roots, cultivated on Colombian soil at El Rubi Farm. Grown from a single germinated green bean, it now flourishes across 1,200 trees, a testament to bold experimentation and careful stewardship. The cherries are picked at peak ripeness, sorted to remove floaters and impurities, then pulped and placed into sealed tanks for a slow, 60-hour anaerobic fermentation. Spanish Thyme leaves are added during this stage, infusing the coffee with a subtle herbal complexity. After fermentation, the beans are fully washed and dried in marquesinas for 14 days, allowing the flavors to settle and shine.
In the cup, this coffee is vibrant and layered. Floral aromatics lead into a spicy, Ethiopian-style brightness, balanced by the creamy body typical of Colombian terroir. A tropical fruit finish lingers, rounded out by a whisper of thyme that adds depth without overpowering.
