This Red Bourbon is a collaborative effort between two standout producers from Planadas, Tolima: Milton Sánchez, who grows high-quality cherries at La Cumbre Farm, and Jorge Rojas, a skilled processor known for his precision and innovation. Milton’s cherries are selectively harvested and delivered to Jorge’s processing plant, where they undergo a carefully timed fermentation and drying routine designed to preserve clarity and sweetness.

The process begins with a 24-hour fermentation in cherry, followed by pulping and a second 36-hour anaerobic fermentation in sealed blue tanks. Drying is mechanical but mimics natural rhythms, alternating 8-hour heat cycles with 16-hour rest periods. Once the coffee reaches 20% humidity, it’s rested for 48 hours to stabilize before final drying. This method allows for consistency and control, regardless of climate shifts, and is refined seasonally through close collaboration between Jorge and Crane House Coffee.

In the cup, expect a lively fruit-forward profile with honeyed sweetness and a silky texture. It’s a coffee that reflects Milton’s excellence in cultivation and Jorge’s mastery in processing, a small-lot gem that’s 100% direct traded and organically grown.
