La Roca is a traditional Colombian coffee with a refined twist, organically grown at high altitude and processed with a slightly extended fermentation to enhance clarity and sweetness. Jorge Rojas is part of the Asociación de Productores Ecológicos de Planadas (ASOPEP), a cooperative of over 300 farms committed to ecological agriculture and certified under Colombia’s BIO organic standard. His approach balances tradition with innovation, resulting in a coffee that’s both familiar and elevated.

The extended fermentation allows subtle fruit notes to emerge without compromising structure. Because of the cool mountain climate, the coffee mass remains stable during oxidation, preserving the integrity of the bean. After fermentation, the coffee is washed and dried with care, producing a clean, expressive profile. Whether roasted fast and bright to highlight its citrus and floral tones, or slower through the Maillard phase for a creamier, chocolate-forward body, La Roca adapts beautifully to both filter and espresso.
